GIVEAWAY: THE COOKING LIGHT GLUTEN-FREE COOKBOOK

If you'd always had an eye out for healthy twists on favorite foods, then you were probably were aware of the magazine Cooking Light even before you began eating gluten-free. If so, you'll be happy to receive The Cooking Light Gluten-Free Cookbook as one of the gifts of this month's giveaway series. This is not a vegetarian cookbook, although many dishes are, but I found that most of the recipes can easily be adjusted to vegan or vegetarian diets, especially since there are many dairy-free recipes. GIVEAWAY: THE GLUTEN-FREE ASIAN KITCHEN COOKBOOK

This cookbook giveaway, The Gluten-Free Asian Kitchen, will solve a problem I think I may share with many people who find they can no longer digest gluten: Asian Restaurant Deprivation. Even though we now have pocket-sized packages of gluten-free Tamari available to us, there is still the problem of all that wheat flour to be found in various dumplings and rolls.

Although this book is not vegetarian, I think some ground or shredded tofu, tempeh or TVP should work well whenever meat is called for. What really excites me is to finally be able to make so many of the dishes I've been missing!

You might wonder what carrot cake is doing on the list, until you discover it is a savory stir fry that's somewhat sweet and whose starring ingredient is a mild radish! This book is full of similarly surprising (to the western palate) dishes, and if you tend to be an adventurous sort, you will love it. On the other hand, if there are old favorites (not one, but three recipes for dumplings, for example) you've loved and recently lost, you will find them here, too!

GIVEAWAY: THE DAIRY-FREE AND GLUTEN-FREE KITCHEN COOKBOOK

This gluten-free giveaway item, the cookbook the dairy-free & gluten-free kitchen, is also for dairy-free diners, and as the photo on the cover displays, with attractive food still available to both camps, despite the dietary restrictions. As for taste, I can attest to the deliciousness of the recipe I tried, and here's the tale of my efforts.
This lovely loaf, pictured with the parchment paper with which it was baked, was the result of this cookbook's gluten-free dairy-free recipe, fiber-rich sandwich bread, made with the book's gluten-free flour mix.
Both crunchy crust and delicate crumb are admirable aspects of the bread. Makes a great grilled cheese sandwich (sorry, ate it so fast, forgot to photograph it!), excellent toasted or untoasted.

Now, a confession. This was my second effort. No fault of the book's. I forgot to add the cider vinegar. Just a teaspoon. But when it was time to spoon the batter into the loaf pan, it felt stiff to me. Rather than end up with a brick-like loaf (oh, yes, that's happened before), I decided to take advantage of the firmness of the batter (really, a dough, at this point).

First, i divided the dough in two. I mixed equal parts sugar and cinnamon in a small bowl and set that aside. I got out a jar of toasted onion bits and poured some into a small bowl. Then I pinched off large marbles, rolled them into snakes and knotted them.

For half the dough, as I finished each knot, I brushed it with olive oil, and dipped it into the bowl of onion bits.

For the other half, I dipped the marble of dough into the bowl of cinnamon sugar, made my snake and then my knot, and finally, gave the knot a brush of oil and another dip into the cinnamon sugar. Here are the results. Talk about snackable!!

GIVEAWAY: EREWHON CRISPY BROWN RICE CEREAL AND RECIPE

Here's another gluten-free giveaway from Attune, the makers of Erewhon Crispy Brown Rice Cereal. You will receive coupons for four free boxes of cereal, and not just the one pictured above, but for any cereals of your choice made by Attune. There are fancier cereals offered this giveaway month, and they're all "good eating" as Alton Brown would say, but this particular cereal is a great one to have in your pantry because it's just so versatile. Add fruit, spike the milk with cocoa or cinnamon, or, my favorite, get cozy and watch a dvd with a bowl of these to your side and snack on them as you would popcorn.
Needless to say, they're perfect in recipes that call for crispy rice of the non-brown variety, too. Pictured above is my version of a fruit and nut spice bar, lightened up with grains of Erewhon crispy rice. Here's the recipe:

Ingredients

1/2 cup almond flour
1/2 cup dates
1 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
1T maple syrup
4T water
1 cup Erewhon crispy rice

Instructions

Spray one 9x11 or 8x8 inch pan with cooking spray.
Process all but rice in food processor until you have a thick paste.
Place paste in bowl and mix in rice.
Bake at 375 degrees fahrenheit for 20 minutes.
Cool in pan and cut into bars.

GLUTEN FREE VEGAN LUNCH AT CANDLE 79 NYC

I'm a serious fan of Candle 79. For several years, it has been where I go when I want to celebrate, because the food is reliably excellent and the setting is casually elegant, in a way no other vegan restaurant in the city can match. And when I was diagnosed with celiac disease, it made me happy to find out that I wouldn't have to give up one of my favorite restaurants. since in addition to being well-known in the New York for great vegan food, they were now presenting a range of gluten-free dishes from starters to dessert. No deprivation. Just delicious food in a good-looking environment (I love dining upstairs), friendly, informed service and lovely presentation.
Last week I had my first lunch of the many meals at I've enjoyed at Candle 79, and, no surprise, this meal was a home run, too. Call me boring, but I've started so many meals at this restaurant by ordering the house ginger ale. Which is the Housemade Ginger Ale, made of fresh ginger, lemon, agave, fresh mint, sparkling water and ice. I'm so crazy about it I drank most of it before I could get my camera out!
My appetizer was the gluten-free version of the Smoked Hummus Plate. Instead of paratha bread, it's served with a stack of sesame rice crackers. There's a roasted garlic bulb, olives and a generous amount of smoked hummus topped with red pepper oil. As you can see below, no garlic clove was left uneaten. This is my favorite way to eat garlic, when the cloves are roasted to the point of magically becoming a creamy spread.
Mustard-Ginger Grilled Tempeh sounds pretty basic, no? This was my main dish and it was far from basic. The dense little structure at the center of the plate began with a pool of velvety sweet potato puree edged with a tangy cranberry-chipotle coulis, upon which were placed a combination of brussels sprouts, lentils, brown rice and sunflower seeds, topped with the grilled, marinated tempeh garnished with apple salad. An unexpected, delightful complexity, hearty, yet bright, with an absolutely virtuosic range of flavors!
Candle 79 is located on 79th Street near Lexington Avenue in NYC.

This giveaway, which will entitle you to four free boxes of cereal produced by Assure Foods, is not focused solely on the Cocoa Crispy Brown Rice. Use the four coupons on any cereals you prefer (and they make a bunch of great gluten free ones!). Generally speaking, I'm not a fan of chocolate cereal, but this one changed my mind. After trying this cereal, I finally see the attraction: add some milk and you've got chocolate milk with bonus nibbling--sweet!
One of the best things, however, about this particular gluten-free cereal is its usefulness as baking ingredient. And for that reason, you must try these little cookies. They're similar to some chocolate energy bars I make which I'd always wanted to lighten up a bit. The crispy rice does the trick. SO easy to make.

Ingredients:

1/2 cup almond flour
1/2 cup dried dates
4T water
1T agave syrup
2T cocoa
1 cup cocoa crispy brown rice cereal

Blend all but rice in food processor until a thick paste is formed. Empty all into a bowl, mix in rice, and form into about 15 small balls. Place on cookie sheet line with silicone baking sheet. Flatten balls into cookies. Bake 15-20 minutes at 375 degrees Fahrenheit. Allow to cool and firm up before removing from baking pan.
