GLUTEN-FREE VEGETARIAN CUMIN LIME CARROT SALAD


This is one of the easiest recipes, and probably shouldn't even be glorified with that title. Here's what I did to make this interesting carrot salad for two:


3 large shredded carrots (I used my mini food processor. Took a minute.)
1/4-1/2 cup dried raisins (I would have preferred currants, but was out of them.)
juice of half one lime
1 tsp dried cumin
salt and white pepper to taste

Mix well.

Also good with this mix: 1/2 tsp freshly grated ginger, 1/2 tsp oil, or both.
