I know. More vegan gluten-free roasted vegetables. Isn't this supposed to hit me in the fall? I don't know why, but it's hit me now. OK, the version above:
Clean and quarter white button or cremini mushrooms.
Roughly chop onions and red and/or yellow sweet peppers.
Sprinkle with olive oil, oregano, garlic powder and salt.
Roast at 400 degrees fahrenheit until charred. Check at 15 minutes and turn vegetables.
While vegetables roast, shred and steam a bunch of kale. Sprinkle with lemon juice. Set aside.
Serve vegetables over kale.
