These Ginger Golden Crunch cookies are wheat-free, gluten-free, egg-free, dairy-free, soy-free, nut-free, and taste great, too! The combination of brown rice flakes and millet flakes give the cookies a real shortbread-like texture, and the mix of coconut and ginger is a total success. This is, however, a very sweet cookie.
(Not too sweet for me, though, since my sweet tooth is more of an elephant tusk!) This brand is new to me, but perhaps I've just missed it. Research tells me the entirely gluten-free British company has been in existence since 2004, but I'm not sure when they started to be distributed in the US. My local Gristedes (A NYC chain) supermarket, which previously had seemed lost in time, perhaps somewhere in the early 80s, has recently spiffed-up and even designated a gluten-free area with a dedicated gluten-free freezer (entering the 2010s!), and they now carry this cookie as well as the non-ginger Supreme Golden Crunch, which I'm assuming is more of a traditional, plain shortbread. These crunch-style cookies are also made with chocolate chips, raspberry bits or a chocolate coating as well. I'll be keeping an eye out for the other varieties, because the one I tasted was superb!
