GLUTEN FREE PEPPER CHEESE MUFFINS: Simply Gluten-Free Quick Meals

If you want the feeling of security that comes with making your own gluten-free meals at home, but hate the seemingly endless ingredient lists that accompany many gluten-free recipes, then this wonderful cookbook, Simply...Gluten-Free Quick Meals is for you, and this variation on one of Carol Kicinski's recipes admirably proves that simplicity can be delicious. 

I started with Carol's Whole Grain Pancake and Biscuit Mix (just four ingredients) for these lovely muffins. I measured out the mix and added five more items, and a half hour later I had a dozen generously-sized cheddar cheese muffins studded with bits of roasted red pepper. They were so tasty they started disappearing immediately! 
Here's the book. Not vegetarian but with so many ideas for gluten-free folks that I highly recommend it. Next : Breakfast Quesadillas. And then, Dairy-Free Coconut Pie!
