GLUTEN FREE VEGAN MUSTARD-SPIKED KOHLRABI CARROT SLAW



Above, Root Vegetables: Beets, Turnips and Kohlrabi


Kohlrabi Carrot Slaw with Creamy Mustard Dressing:

Ingredients:

1 kolhrabi, about 1.5 lbs, peeled and shredded
2 carrots, peeled and shredded
2 T vegan mayonnaise
1 tsp whole grain Dijon mustard
salt and pepper to taste

Instructions:

Stir and chill.
