GLUTEN-FREE VALENTINE RECIPE ROUNDUP: valentine corn muffins

These Valentine's Day bite-sized treasures are perfect for a romantic midnight snack.


Heat oven to 425 degrees

Ingredients:

1 c stone ground cornmeal

1/2 c white rice flour

1/2 c brown rice flour

1/2 c sugar

1T baking powder

1 t salt

1 t baking soda

1 egg

1 c milk

2 oz oil

36 canned cherries

colored sugar


Instructions:

Beat eggs, oil and milk.

In a large bowl, mix dry ingredients.

Add egg mix to flour mix, until just combined.

Spray silicon tray.

Spoon batter into pan.

Top with cherry, or sprinkle with red sugar, or both.

Bake until tops are lightly browned, about 15 minutes.


Makes 36 mini heart muffins.
