GIVEAWAY: THE DAIRY-FREE AND GLUTEN-FREE KITCHEN COOKBOOK

This gluten-free giveaway item, the cookbook the dairy-free & gluten-free kitchen, is also for dairy-free diners, and as the photo on the cover displays, with attractive food still available to both camps, despite the dietary restrictions. As for taste, I can attest to the deliciousness of the recipe I tried, and here's the tale of my efforts.
This lovely loaf, pictured with the parchment paper with which it was baked, was the result of this cookbook's gluten-free dairy-free recipe, fiber-rich sandwich bread, made with the book's gluten-free flour mix.
Both crunchy crust and delicate crumb are admirable aspects of the bread. Makes a great grilled cheese sandwich (sorry, ate it so fast, forgot to photograph it!), excellent toasted or untoasted.

Now, a confession. This was my second effort. No fault of the book's. I forgot to add the cider vinegar. Just a teaspoon. But when it was time to spoon the batter into the loaf pan, it felt stiff to me. Rather than end up with a brick-like loaf (oh, yes, that's happened before), I decided to take advantage of the firmness of the batter (really, a dough, at this point).

First, i divided the dough in two. I mixed equal parts sugar and cinnamon in a small bowl and set that aside. I got out a jar of toasted onion bits and poured some into a small bowl. Then I pinched off large marbles, rolled them into snakes and knotted them.

For half the dough, as I finished each knot, I brushed it with olive oil, and dipped it into the bowl of onion bits.

For the other half, I dipped the marble of dough into the bowl of cinnamon sugar, made my snake and then my knot, and finally, gave the knot a brush of oil and another dip into the cinnamon sugar. Here are the results. Talk about snackable!!
