GLUTEN FREE VEGAN MUSHROOM DINNER (BRINGING STEAKY BACK!)

I recently taught a class on gluten-free cooking at my local Whole Foods, and this dish was one of the students' favorites, so I thought I'd bring back the Gluten Free Vegan Steaky Mushroom Dinner posted here a while back. I can only imagine how incredibly delicious these would be if you could convince the grillmaster to hold a section for gluten free veggies, but even done in a regular old frying pan, they are pretty impressive!

several garlic cloves, minced or crushed
half or whole large onion, sliced
fresh parsley chopped
fresh pepper
olive oil for all
mix of tamari and balsamic vinegar
turn mushroom slices once or twice
cook until liquids almost evaporate and mushrooms are glazed
no real measurement because all is to taste
try it with a green vegetable and mashed potatoes, as shown
