A Valentine's day salad must, of course, include love apples (tomatoes) but wouldn't it be sweet to have hearts as well? This is a salad fit for the Red Queen or Red King, since only the lettuce is not red. It is made of cherry tomatoes, roasted sweet peppers, sliced morello cherries, sliced carrots, and a bit of romaine lettuce. Watermelon radishes (the pink ones) would be great, or any radish for that matter. Not to mention red leaf lettuce and red cabbage. The dressing, in keeping with the red theme, is a cranberry balsamic vinaigrette. 

Cranberry Balsamic Vinaigrette

Blend in food processor:

4T basalmic vinegar

4T olive oil

8T dried cranberries

8T water

1/2 tsp salt

1/4 tsp pepper

Delicious salad recipe. Looks so glorious. I would like to make it at valentine day with adding more ingredients in it.

yes you can definitely making it all some or all of the ingredients i mentioned--plus dried cranberries in the salad as well. go red! and thanks for writing!
