GLUTEN FREE VEGETARIAN INGREDIENT OF THE DAY: TAPIOCA


These cookies are the perfect accompaniment to a meal of rich food because they are sweet and lemony and melt-in-your-mouth light. Easy, too.

Ingredients:

1 cup rice flour

1 c cornstarch

3/4 c tapioca flour

1 t baking powder

1 c sugar

1 c butter or margarine or Earth Balance Spread, or a mix

1 lightly beaten egg

2 t lemon juice

1 T grated lemon rind

1/4 c oil 

2 oz colored sugar


Instructions:

Heat oven to 350 degrees

Whisk together all dry ingredients. Cream shortening and sugar in mixer. Add lemon juice, rind, and egg. Add flour, mixing till blended. Drop teaspoonfuls onto ungreased cookie sheet. Fill one small bowl with oil, another with colored sugar. Dip bottom of flat glass into oil, then into sugar. Lightly press cookies flat with bottom of glass.
