****2 MINUTE SOUP****
It's the kind of soup dieters snack on before a meal; it's light, but cuts the urge to overeat. I like it as a pick-me-up any time of day, since it takes only 2 minutes if you've got a bag of broccoli stem cubes in the freezer. And if you don't have a bag of those cubes, you should know that turning the ugly ducklings below into cheap and pretty convenience food is a snap! Here's how:
It starts with broccoli stems hidden away in the fridge, almost on their way out.
Boil water, add vegetable soup mix (I like Better than Bouillon), slice a mushroom, grab a few cubes of frozen squash, and mix all briskly to heat squash and, of course, the broccoli cubes.
Sprinkle with soy bacon bits and it's ready to eat!
