Only two ingredients:
4 oz Dates.
And 4 oz cashews.

Only three instructions:
Toast the cashews in a dry frying pan.
Process dates and cashews in food processor to a thick paste.
Shape into bars.
That's it.

Scout your local health food megamart for a bar with the same two ingredients. You'll see that by making these yourself,wrapping them in waxed paper and popping them in your lunch bag, you've saved 50% on the store price!

Can you spare 15 minutes to make a dozen bars to save a ton? Thought so, which is why I've shared this basic recipe. I hope you experiment. They freeze and defrost nicely so no problem stashing away a range of combos. I'm thinking cranberries, or coconut, or figs....the possibilities are vast.

I like this idea. Do you have an idea what could be used in place of dates?

Not a date fan...

the first thing i would try would be figs. or a mix of dried fruits? some you could use would be apricots, cranberries, prunes, raisins. you might have to play with the amounts based on how moist the fruits are (a little more nuts if the bar doesn't seem stiff enough to be bar-like).

if only using dates & cashews - how many dates & how many cashews to make 12 bars (size based on cliff or lara bar)?

(You might wonder how I came up with a nutritional analysis without any ingredient amounts.) Oops--I forgot to post them!!

But I have corrected it, thanks to your eagle eye! Hope you make them, they really are good! They are about the size of a Lara bar. Maybe a smidge smaller.

It's been awhile since you posted this but I just found your blog. Have you tried this recipe with almonds? I can't do cashews.

thanks for finding the blog--hope you decide to sign up. i would think that almonds would be a good choice for these. what you get, basically, is a half nut-butter half fruit-paste mixture, so even though i haven't tried it, i think it would be fine. good luck with it!
